Workin It Wednesday

{Glazed Salmon Over Rice}

Okay this is the easiest recipe, Super healthy, and SOOOO yummy. This will be on our menu often from now on!


{Ya I made that! all by myself :)}

So lets get down to business:

1-2 cups of rice
Broccoli Florets 
1 red onion
Salmon Filets (one per person)

{Glaze}
2 tablespoons of soy sauce
1/4 cup brown sugar

-mix together your soy sauce and brown sugar
-Cook your rice according to directions ( I just used minute rice) Add the broccoli (thawed if frozen) in the last two minutes.
-Cut your red onion into wedges. Place salmon and red onion on a foil covered cookie sheet. Drizzle Olive Oil over red onion and salmon. sprinkle with salt and pepper. 
-Set oven to Broil. 
-Broil salmon for 6 minutes. Take salmon out and drizzle 1/2 of the glaze over salmon and red onion. Place salmon back in oven and broil for another 2-4 minutes (or until it is done)

-When the rice and salmon are all done, place rice/broccoli mixture on plates. Top with salmon and red onion. Drizzle the remaining glaze over salmon.
